I read about this little restaurant on Chester City Walls a while ago. A vegan restaurant focussed on sustainability and local ingredients, it piqued my interest immediately even as a meat eater. Offering seasonal tasting menus where everything is used, produce is grown organically and their own fermentation lab produces innovative drinks, I finally booked this now Green Michelin Star Awarded restaurant and visited with my husband last week.

Created by Nicholas Friar, we sat down to enjoy ‘The Seasons Story’, a two and a half hour long tasting menu for £70 each. Whilst I went for a glass of wine, my husband chose the ‘soft flight’ which I have never come across before. A pairing for each course of a soft drink, mainly Kefir and Kombucha of their own making. How original! The staff were so lovely and knowledgeable and it was great to have them switch out the gluten containing ingredients for Steve without fuss.











If I describe each course individually we’d be here forever, but suffice as to say, everything was incredible and I didn’t miss the meat one bit. Each course was explained by the waitress, including the ingredients origins and thoughts behind the dish.
Everything tasted fresh and of great quality and I could have eaten a pile of the Lángos! They were incredible, and I claim to dislike tofu! The flatbread was replaced with a buckwheat crumpet for Steve and he loved it too.
We have been trying to eat less meat, and eat better quality when we do. I’d definitely come here again and Steve was so happy to find a restaurant that had no problem catering to his food intolerances, and was easy as no dairy would be involved anyway.
Sustainability is so so important and I applaud Hypha for being so innovative. Big thumbs up from us! We loved the receipt on poppy paper too. I shall enjoy planting it in the spring 🤩
